ROASTED EGGPLANT WITH TAHINI SAUCE
Sometimes Eggplant needs a little help, as it’s pretty bland on its own. Tossing roasted eggplant wedges in a zesty Tahini Sauce makes for a super flavorful side dish, appetizer as part of a Mezze Platter, or even a vegetarian main course with Mediterranean Quinoa Salad.
